Yes, you can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes. You can also use a block of PI Parmesan cheese and grate your own parmesan, be sure to use the finest section on your grating tool.
Parmesan is not typically used for melting applications. However, it will melt well if you add it into a cheese sauce. The finer the shred, the quicker it will melt.
If you are using finely ground parmesan, it won’t melt very well.
